Ein gutes Roastbeef muss absolut zart serviert werden. Das Vakuumgaren ist dabei die optimale Lösung und garantiert das perfekte Ergebnis. Bei geringen Temperaturen im Vakuumbeutel bleiben sowohl die Geschmacks-, als auch die Nährstoffe des Fleisches erhalten! Hier die Geräte: Vakuumiergerät: 🤍 Sous Vide garer: 🤍 Kupferpfanne: 🤍 Schüssel: 🤍 Gasherd: 🤍 Hier das Rezept: 1. Zunächst einmal nehmen wir das hochwertige Roastbeef und geben es in den Vakuumierbeutel. Mit in den Beutel kommen Rosmarin, Thymian und Knoblauch. Außerdem noch etwas Butter, ein Schluck Weißwein und etwas Pfeffer – Salz sollte an dieser Stelle noch nicht hinzugefügt werden, um dem Fleisch nicht zu viel Feuchtigkeit zu entziehen. Anschließend den Beutel mit dem Vakuumiergerät vakuumieren. Bei 49°C wird der vorbereitete Beutel nun in den Sous-Vide Garer gegeben und das Fleisch wird für ca. 6h darin schonend gegart (zeitlich variabel je nach gewählter Temperatur). 2. Das fertig gegarte Roastbeef wird im Anschluss in etwas Olivenöl schön scharf angebraten und mit etwas Salz und Pfeffer verfeinert. Außerdem wird noch der Fleischsaft aus dem Beutel hinzugegeben und leicht mit einreduziert. 3. Für den Dip schneiden wir etwas Petersilie, Schnittlauch und Dill. Das alles wird dann zur Crème fraîche gegeben und mit etwas Salz, Pfeffer und Zitronensaft verfeinert. 4. Zum Anrichten schneiden wir ein schönes Stück vom Roastbeef ab und geben es auf den Teller. Außerdem wird die Ofenkartoffel mit Alufolie, so wie sie nach etwa 45 min bei 180°C aus dem Ofen geholt wird, einfach einmal in der Mitte aufgeschnitten und dazugelegt. Etwas Sour Creme on top und fertig! Bereidingswijze kalfsvlees sous vide: Kalfssukade 1. Haal het kalfsvlees uit de koelkast 2. Laat het kalfsvlees ongeveer 30 minuten op kamertemperatuur komen 3. Pak een bakpan 4. Door een vleestang te gebruiken kun je het vlees niet lek prikken 5. Zet het vuur hoog 6. Zet de pan op het vuur en laat de pan heet worden 7. Draai het vuur middelmatig 8. Doe de boter in de pan 9. Laat de boter uitbruisen 10. Leg het kalfsvlees in de pan 11. Braad het kalfsvlees (de kalfssukade) rondom aan gedurende circa 5 minuten 12. Haal het kalfsvlees uit de pan en leg het op een schaal. Laat het afkoelen in de koelkast in circa 30 minuten 13. Breng het water op 61°C d.m.v. de sous vide stick 14. Vacumeer het kalfsvlees met kruiden en specerijen 15. Leg het gevacumeerde kalfsvlees in de sous vide bad 16. Stel de tijd in op 24 uur 17. Haal het kalfsvlees na 24 uur uit het bad 18. Knip de zak open 19. Snij het kalfsvlees in plakken van circa 2,5 cm 20. Zet de bakpan op middelhoog vuur 21. Doe boter in de pan 22. Laat de boter uitbruisen en bak het kalfsvlees om en om 2 minuten, 1 minuut per kant, tot de buitenkant licht bruin kleurt. 23. Eet smakelijk
